In our 200-square-meter shop, with a welcoming and modern atmosphere, you can shop at the butcher’s counter or directly taste our selected meats prepared with marinades, expert aging and perfect cooking, possibly paired with a glass of wine or of MetodoClassico Trento Doc, local beers, cheeses and vegetables.

MEATS AND AGING
OUR TRENTINO AND INTERNATIONAL SELECTION
Our bovine are Limousine breed and are raised in Trentinoby Az. Agricola DalponteCandidoin Lomaso. Meat is carefully aged for at least 25-30 days before selling it.
All year round, you’ll find rib-eye steaks and Florentine steaks of different aging, 30 daysminimumand up to 60-70 for those who like it.
Upon request, we prepare American cuts for barbecue (brisket, beef ribs, tomahawk steak, hanger steak, cuberoll, tri-tip). During the year, we select some foreign meats of special breeds (American Black Angus, Spanish Galician, JapaneseWagyu, English Aberdeen Angus) to compare and taste meats coming from all over the world.
In summer, you’ll find ox (adult castrated bovine) meat, an exquisite and extremely rare type of meat that our breeder supplies to us exclusively. This type of meat is characterized by a higher marbling and fat than the common bovine, making it tastier, succulent and tender.
